The recently published ICMR guidelines on the use of non-stick cookware advised users to carefully observe usage and cleaning instructions to prevent exposure to pollutants. A major warning sign to discontinue using and throw away a pan is when the Teflon coating starts to wear off.

Teflon is a man-made substance composed of carbon and fluorine atoms that is typically used to coat non-stick cookware. Cooking in them is OK at room temperature, but at high temperatures, the coating may release toxic fumes or poisons that might contaminate your food with micro- and nanoplastics and PFAS.

To assist Indians in making healthier food choices, the ICMR and the National Institute of Nutrition published 17 new dietary guidelines for Indians in various age categories. With the goal of promoting good health and preventing all types of malnutrition, the guidelines attempt to offer evidence-based suggestions to Indians so they may make educated dietary choices. The guidelines provide advice on healthy weight control, physical exercise, hydration, food safety, and food labelling in addition to dietary recommendations.

The guidelines also included a variety of pre- and cooking techniques, including blanching, steaming, frying, roasting, and slow cooking, in addition to emphasising the value of good cooking practices for general health.

When Teflon-coated nonstick cookware is cooked to temperatures above 170°C, there is a risk involved. If an empty pan is left on a hob for an extended period of time, this might occur. Here, the coatings may release noxious or unpleasant vapours. Non-stick cookware should be used and cleaned according to the manufacturer’s instructions, and when the coating is worn off or damaged, it should be thrown away, according to the ICMR recommendations.

How to securely use nonstick cookware

It is best to avoid preheating an empty pan as it might heat up quickly and create harmful smells.
It is best to cook over a low to medium heat.
It is recommended to use an exhaust fan or chimney when cooking in non-stick pans.
When cleaning, take care not to scratch the non-stick coating. Use a gentle sponge and warm, soapy water to gently wash.
Replace the cookware if the coating starts to peel.
Cooking using cast iron, ceramic, stainless steel, and stone cookware is preferable.
